Instructions
- Prepare the apple filling by cooking the apples, butter, sugar, spices, lemon juice, and salt until softened. Stir in the cornstarch slurry and cook until thickened. Add vanilla and cool completely.
- Cream the butter and sugars until light and fluffy. Beat in the egg and vanilla.
- Whisk together the dry ingredients and gradually mix them into the butter mixture. Chill if needed.
- Roll out the dough to about ¼-inch thick and cut into circles. Add cooled apple filling (about 1 tbsp per cookie) to the center.
- Cut dough strips and arrange them in a lattice pattern over the filling. Gently press the edges to seal the cookie then brush the lattice with egg wash before baking.
- Bake at 350°F for 20–25 minutes, until golden.
Notes
- Finely dice the apples. Smaller pieces make the filling easier to scoop and help keep it from spilling out.
- Cool the filling completely. Warm filling can soften the dough and make assembly more difficult.
- Don't stress about perfect lattice tops. A rustic, homemade look is part of the charm.
- Cookie size matters. These oversized cookies are more like individual mini apple pies. Baking time may vary depending on cookie size. Larger cookies will yield fewer servings and may need additional baking time. Watch for golden edges and a baked-through crust.
- Refrigerator: Store in an airtight container in the refrigerator for up to 4 days.
- Reheating: Warm in the oven at 300°F for a few minutes to refresh the crust.
- Freezing: For best texture, freeze the baked cookies in an airtight, freezer-safe container. Thaw in the refrigerator and warm before serving.
