When my daughter returned from a European farming tour, she surprised me with something I wasn’t expecting—an Italian Pasta Madre bread mix. Along with a few other favorite foods from her travels, this was the one that immediately caught my attention. With her heading off to college this fall to study large animal science, it felt like the perfect project for us to tackle together before she leaves. I’d never heard of Pasta Madre before, and before opening the package, I wasn’t sure how it compared to a traditional sourdough starter. Our family loves farm-to-table cooking and trying foods from different places, so instead of letting the package sit in the pantry, we decided to make it a project we’ll do together before she leaves. My hope is that it becomes something we can continue whenever she’s home on break.
What Is Italian Pasta Madre?
If you’re like me, you might assume Pasta Madre is the same thing as a traditional sourdough starter. I certainly did! The specific product we’re trying is Tibiona Pasta Madre con Lievito di Birra, an Italian bread mix that caught my curiosity the moment my daughter brought it home.
It turns out it works a little differently.
According to the manufacturer, this Tibiona Pasta Madre con Lievito di Birra mix combines dried sourdough with baker’s yeast, creating an easier way to enjoy homemade bread with sourdough flavor without maintaining a traditional living starter. That makes it an appealing option for anyone who loves the idea of homemade bread but isn’t quite ready to care for a starter every day.
Thankfully, the QR code on the package links to the manufacturer’s website, where the instructions are available in English. That means we can spend less time translating and more time enjoying the baking experience.
Now I’m excited to see how this traditional Italian baking ingredient compares to the breads we normally bake at home and whether it earns a permanent place in our pantry.
Since we haven’t baked with it yet, this post is all about introducing the product and sharing why we’re excited to try it. I’ll update you with our honest experience once we’ve had the chance to make our first loaf.

Why I’m Excited to Try Italian Pasta Madre
I’m not approaching this as an expert.
I’m approaching it as someone who enjoys learning new things, especially when they involve slowing down, spending time in the kitchen, and making memories with family.
I’m especially curious to discover:

- What the finished bread tastes like
- Whether it has that classic sourdough flavor
- If it’s something I’d use again
- Whether it’s beginner-friendly enough to recommend to others
Sometimes the most enjoyable kitchen projects aren’t about perfection—they’re about trying something new together.
Our First Experience Baking with Italian Pasta Madre
We’ll be making the bread after we get back from vacation, and I’ll be documenting the entire experience from opening the package to slicing into the finished loaf.
I’m looking forward to seeing whether this Italian bread mix becomes something we make together for years to come. If it does, I have a feeling it won’t just be about the bread, it’ll be about remembering where it all started.
